You may know the name Beaufort from the family estate in Ambonnay. Despite the lineage, Amaury did not take over the estate, but instead moved to the Aube. If there is anything notable that Amaury has taken with him, it is his dedication to the vineyard. They cultivate the vines without any chemicals. He farms 1ha in Polisy called “Le Jardinot”. Amaury has been working in wine since 2003 and his first vintage is 2018. Its wines are made naturally without intervention; in barrels and tuns; spontaneous fermentation and no added sulphites.
