Description
Pioneers of agrobiology since 1971, the vines are cultivated by protecting the environment and the microcosm of the plots. Wanting to go further because agrobiology tolerates copper salts and sulphur; since 1974 essential oils that limit the evolution of parasitic fungi have been used, and since 1980 the estate has been exploring homeopathic treatments. The vines of Ambonnay are located on limestone soil. The climate is continental, rather cold and dry, with winds coming particularly from Siberia. The Champagnes produced are structured, full-bodied and very aromatic. The chalky soil allows a very free expression of the grape varieties, which is why the pinot noir and chardonnay are so marked.

Tasting | After 20 years of ageing on lees, this exceptional Champagne concentrates the aromatic richness with the freshness of a recent disgorgement. A true living wine, the aromatic palette is monstrous and the wine changes with each tasting. Aromas of mirabelle plums, roasted hazelnuts and crème brûlée evolve into notes of Jonagold apples, cinnamon and wild flowers. The palate is generous and expansive, with tones of Brazil nut, greengage and iris that build to a fine, lively finish. It is a complex and delicious champagne! |
