Description
The cellar master, elaborates the 2008 vintage by sourcing only from 6 Grands Crus villages (Mesnil-sur-Oger, Chouilly, Cramant, Avize, Ambonnay and Mailly and 1 Premier Cru village (Cumières). The signature of an exceptional vintage, this cuvée represents a unique and singular winemaking process perpetuated since 1930. Indeed, the House uses less liqueur de tirage, which results in a lighter and more airy foam. Its foam is smooth, creamy and persistent. The 2008 vintage has the particularity of not having undergone malolactic fermentation and is aged for 12 years on its lees. It is an expressive and powerful wine, with spicy notes and cooked fruit flavours.

Tasting | Its nose develops aromas of candied citrus fruits, honey, spice and delicate flavours of panettone and praline. On the palate the attack is fresh and pure but generous with a multitude of fresh fruit aromas (strawberry, redcurrant, citrus) combined with a beautiful minerality typical of the vintage. An aperitif wine, of course, but it is also a perfect accompaniment to smoked salmon wraps, Bellota ham or a fruity 18-month Comté. |
