Description
Created in 1988 as a tribute to Elisabeth Salmon, co-founder of the House, this great vintage rosé champagne, rare and sought after, subtly offers the signature of the best Pinot Noir and Chardonnay terroirs. Part of the Pinot Noir is made into red wine from grapes from the “Valofroy”, a plot of old vines in Mareuil sur Aÿ. Maturation on the lees in the cellar for 9 to 10 years gives this great wine extreme refinement and marks its personality with a great delicacy of texture and flavour.

Tasting | On the nose it is a refreshing sensory expression of citrus peel and red berry jelly. With the exquisite sensation of a rich and complex aromatic amplitude (Plougastel strawberry, Mara des Bois and vine peach). Beautifully refined and mature olfactory notes, respectfully declining the inimitable scents of sweet spices and wild raspberry pulp. On the palate, a measured power while delicate and tasty at the same time, with the harmonious blossoming of gourmet flavours (tangerine, blood orange and kidney pie). A full, fleshy structure on the palate, progressing to a chalky point with a persistent finish of citron zest and red and white currants. This great wine of extreme refinement marks its personality with a great delicacy of texture and flavour. An aromatic charm of a rare mineral dimension to accompany beautiful Bresse poultry with crayfish or some royal Breton langoustines. |
