The Clos Saint-Hilaire from Billecart-Salmon is made from a one hectare plot of old Pinot Noir vines planted in 1964 and located in Mareuil-sur-Aÿ. This 100% champagne vinified in barrels with a long period of maturation on the lees for 14 years gives us a wine of incredible typicity with all the qualities of a great, deep and singular wine for ageing

Tasting | The colour is an intense golden yellow with golden hues. On the nose, a noble, racy expression and an olfactory impact of great vinous complexity (candied citrus fruits, flowers, blond tobacco). A resplendent blossoming with a honeyed character and identified with oriental nuts and spices. On the palate, an ample texture with a patina of barrel ageing, with accents of yellow fruit in syrup (William pear and fresh quince) and panettone. With an overflowing richness of flavours (roasted pineapple, puffed buckwheat and precious wood). The generosity of this wine carries the finish towards root minerality and a beautiful salinity. A monument of a unique size, this rare vintage will contain no more than 1000 bottles. Served at cellar temperature, this micro-vintage will surprise your palate with a sea bass, shellfish and caviar. |
