Champagne Bruno PAILLARD Assemblage Millésime 2012 Extra Brut
This cuvée has been elaborated exclusively from the first presses; the purest; of grapes coming from 10 of the best Crus of the heart of Champagne. A blend of equal parts Chardonnay and Pinot Noir, 20% of which are fermented in barrels, this vintage has matured for seven years on the lees, then for a minimum of 18 months after disgorgement, developing complex notes of sweet spices and candied fruit, reinforced by a persistent vivacity.
50% Chardonnay, 50% Pinot Noir
An initial nose of dried candied fruit followed by intense black fruit, yellow fruit, then notes of citrus, kumquat, honey, acacia, pastry and blond caramel. The palate is rich and creamy with delicate notes of sweet spices and nuts, carried by a persistent freshness. The finish is long and enveloping on the registers of dried fruits. Perfect as an aperitif, this vintage will go perfectly with a sweetbread.
