Description
Chardonnay exclusively from Grands Crus of the famous “Côte des Blancs”. The practice of vinification formerly reserved for “Demi Mousse” champagne. During the tirage before the second fermentation and ageing, less sugar and ferments are added to provoke this fermentation. This results in slightly less effervescence (about 4.5 kg of pressure instead of the usual 5 to 6). This type of vinification, particularly adapted to Chardonnay, gives it great finesse and maximum elegance. This wine was once called the “lace” of Champagne.
