First nose reserved, held. Gradually the freshness of the citrus fruit, the grapefruit, opens up the wine. The astonishing aromas of stone fruit and ripe apricot follow in force. Honeyed notes, concentration of white flowers sharpened by peppery and even mentholated notes. After several minutes in the glass, notes of liquorice, toasted bread and marzipan appear, mixed with candied fruits. On the palate the attack is enveloping, the substance is deep, ample, almost carnal, punctuated by a light effervescence. Faithful to the nose, we find in the mouth the fruit, the saltiness, the spice of cedar wood… Intensity, strength, but also grace are revealed in these successive openings. A very long finish. A Champagne as an aperitif, but also with seafood dishes combining land and sea.
