Description
The name of this cuvée comes from the green clays. Indeed, the soils are shallow, with very draining limestone marl, and systematically a thick vein of green clay, called “Illite” in pedology. Over long periods of drought, especially during the summer, green clay is the only soil where moisture persists. The fineness and purity of these clays guarantee a supply of water to the grapes. This Champagne is made from a single vintage that highlights the particularities of an exceptional year.

Tasting | It reveals a chalky nose quite characteristic of the terroir and splendid aromas of ripe yellow fruit eau de vie such as plum or mirabelle. Then, with airing, it develops dried fruit flavours, a slightly pastry side and light red berries. Nice roundness on the attack with buttered and brioche notes, which becomes tighter in the second part of the mouth with a well present acidity and a chalky side on the finish. Very good overall structure and good length. A true gastronomy champagne, we will carefully choose the quality of the products and the cuisine: it will divinely sublimate a fried foie gras, a lobster or a grilled lobster, a tartar of scallops, or even a Bresse chicken with morels (perfect match). |
