Description
This cuvée comes from the House’s vineyard, on the Bisseuil terroir, classified as 1er Cru and essentially composed of old vines. It is mainly made from Chardonnay, unlike the rest of the range. The wine is made with indigenous yeasts and in oak barrels. The wine is not filtered and benefits from a long maturation on lees of at least 48 months. The dosage is low to keep the typicity of the terroir.

Tasting | A slightly fermentative first nose, followed by aromas of crunchy orchard fruits, lemon oil, mint, white flowers and almonds. It is medium-bodied and mostly chiseled, its enveloping core of fruit girdled by bright acids and a chalky structure. It needs airing because the longer you wait, the more it opens up to complex aromas. The finish is very lemony and tense. For an aperitif of course, or a wine to be reserved for seafood of character such as sea urchins or smoked salmon. |
