Produced from a plot of Vieilles Vignes “Le Murtet” in the Massif de Saint Thierry, this Champagne is made by spontaneous fermentation using indigenous yeasts. Vinification on fine lees in small barrels and in tuns, with stirring of the lees on fruit days. Ageing of the reserve wines in barrels and demi-muids aged 12 years.
Fût de Chêne
Nose of white flowers, light fresh fruit and citrus. The champagne is supple, fine and round in the mouth, well supported by a nice freshness and a little minerality. Serve as an aperitif, with oysters and seafood, fine fish in papillotes, river fish, and sushi and sashimi.
