Description
The estate has been fully organic since 1998, a culture that allows the expression of the terroir of these 30 to 60 year old vines. A long time in the cellar (6 years) for an empirical cuvée, made by instinct, by observing each plot, each grape and tasting each vat. Made without added sulphur, this Champagne takes on its full dimension after aeration and unfurls on the palate, between velvet and lace, with a scintillating saline length.

Tasting | An extremely aromatic and complex nose. Ripe fruit aromas (baked apple, roasted apricot, poached peach), hazelnut, cashew, praline, but also floral (mimosa), beeswax, greedy pastry aromas reminiscent of custard and hints of liquorice and marked evolution. The bouquet never ceases to surprise, but the palate is not to be outdone, at once voluptuous, incredibly long but still very digestible, carried by a fine mineral framework and a beautiful fruit. A great Champagne as an aperitif or, of course, in gastronomy with a Bresse chicken with morels or sweetbreads. |
