Description
Traditional vinification and maturation on lees to avoid premature oxidation. Malolactic fermentation is carefully avoided in order to preserve the natural fruity aroma of the wines and to ensure perfect conservation. Extra-brut dosage (3 g/l) to maintain the balance between freshness, fruitiness and vinosity without masking the wine’s character and purity. Aged for at least 10 years in the cellar to obtain a complex and structured wine. It is a wine for ageing par excellence.

| Tasting | The nose is complex with toasted, smoky notes where hazelnut dominates. A very fresh nose with mentholated and even slightly spicy notes on warming up. Very nice tension on the palate with volume and crispness continuing on the mid-palate with brioche notes. The finish returns to the beautiful bitterness of the chardonnay with a touch of pink grapefruit. The ideal companion for discerning gourmets who want to share a moment of emotion. It is a perfect accompaniment to simple products such as oysters, belons, langoustines or more elaborate dishes such as sea bream with Thai sauce, chicken with lemongrass, veal grenadin or grilled sole. |
