From a parcel of land, “envers de val dessaux”, on the côte des bar in the Essoyes area, this Blanc de Noirs brut nature, totally vinified and aged in barrels on fine lees, will surprise you with its richness, its minerality and its charm. Typicity of a plot of land and mastery of the wine-making process are the order of the day.

Tasting | The first nose is mineral, reminiscent of a chardonnay rather than a blanc de noirs. Here the clay-limestone terroir speaks for itself. Then, with aeration, the more structured notes of the pinot come through and we find fresh fruit aromas (strawberry, redcurrant, blackcurrant). A greedy, brioche, honeyed, waxed and leathery side extends the nose with more aeration. The balance is perfect and one finds perfectly the sensations of the nose in mouth with a frank, mineral and powerful attack at the same time. The aromas perceived on the nose are there and the finish is long and very pleasant. It doesn't feel like a brut nature and it's a wine that needs to be aired before it reveals itself completely. An aperitif wine of course, but it would be a superb match for sea urchins, prime rib or pan-fried foie gras. |
