Description
Produced from a single plot of land “Tue Boeuf” in Epernay and planted with Pinot Noir, 2/3 of this wine was vinified in small barrels and 1/3 in clay cement eggs. To perfect its balance, malolactic fermentation was not carried out in order to let the wine stand on its own and keep all its freshness and minerality. The whole gives us an expressive and fresh Champagne at the same time.

| Tasting | A disconcertingly fine wine for a pinot noir. Beautiful expression, character, a nose that is both toasted and candied on the aromatic level from the very first seconds (grapes, hazelnuts, cherries). On aeration, the nose reveals light honeyed and spicy notes. On the palate, the richness and strength of pinot noir, but with finesse. An aromatic register on ripe and black fruits. The balance is perfect and the sensations on the palate are perfect between the roundness and strength of the pinot and the minerality and freshness of the wine. The woodiness is very well controlled and gives a nice complexity and length to the wine. A particularly colourful champagne, with a flight of warm spices on the finish. A very fine champagne to be drunk as an aperitif in winter with an open fire or to accompany a fine poultry with morels. |
