20% Chardonnay, 30% Pinot Noir, 50% Pinot Meunier
The first nose evokes notes of bergamot, almond, lemon, blackcurrant, with hints of moisture and iodine. Airing reveals notes of tangerine, white peach toast, quince compote, fig, cherry, plum, and acacia flowers. In the mouth it is a champagne with a creamy, silky texture. It develops a lemony acidity and fleshy fruit. The mid-palate highlights the crispness of the fruit and a surprising salinity. The whole expresses a certain vinosity and greediness with a controlled character. A very nice aperitif wine or this Champagne will go with your most refined dishes such as ravioli with vegetables, as well as a croque of Reims ham and truffled gouda or salmon marinated with lemon.
