Description
A 100% natural champagne, with no exogenous inputs, this cuvée is made from a selection of the oldest vines in Avize and from grapes of impeccable maturity from the “Robarts” and “Bionnes” vineyards. No chaptalization, fermentations are only done by the action of the indigenous yeasts of the grape and the setting of foam is done by adding very ripe grape juice from the following harvest. The wine is bottled under a cork stopper and then spends over 4 years aging on the lees.

Tasting | A great subtlety from the first nose, the brightness and purity of the fruit are irresistible, with frank notes of fresh grapes but also of ripe and juicy white fruit. The rest gradually reveals a beautiful complexity, very subtle, associating mineral and chalk notes, sweet spices, lime and candied fruits or a very delicate truffle touch. The palate perfectly combines the almost suave roundness of a very ripe fruit with a sensation of finesse perfectly supported by a light bubble. A Champagne of great purity, with a long finish, saline, catchy but so delicate. A Champagne as an aperitif of course or to accompany sweet and savoury dishes such as chicken with pineapple or lamb curry with citrus fruit. |
