This Champagne comes from a single 50 year old vineyard “Les Crayères” grand cru in Ambonnay. This parcel magnifies the Pinot Noir which is vinified and aged in Champenoise barrels and gives us all the amplitude and excellence of this grape variety.

Tasting | The first nose evokes a scent of honeysuckle accompanied by notes of toast, warm brioche, caramel, quince compote and buttered apple. Then notes of plum, blackcurrant, frank and iodized chalk, candied pomelo, apricot, sweet almond, pomegranate, wild strawberry, roasting and sweet spices are expressed. The contact in the palate is clean and fresh. This Champagne develops a pulpy and coated fruity matter, supported by a lemon acidity and fleshy fruits. The mid-palate is orchestrated by a chalky minerality, iodine salinity and length on the palate. A slender, pulpy and chalky finish. A complex champagne to be reserved at the table with a poularde aux morilles or with parmesan cheese. |
