Faithful to the particular vinification method of the Maison Paul Déthune, the 2012 vintage is matured and vinified in 34 hectolitre oak barrels. It rests in the cellars of the House for a minimum of 10 years. It is disgorged 6 months before its first marketing

Tasting | The first nose is frank and precise, expressing a fruity register recalling notes of fresh blackcurrant, cherry, blackberry, lemon, toasted almond, enhanced by peppermint and rocky chalk. Aeration adds to the pleasure notes of Carensac liquorice, iodine, vine peach, hazelnut, butter, red apple, raspberry, wild strawberry, pomegranate, toast and sweet spices. On the palate, it is supple and fresh and develops a pulpy and crunchy fruitiness, supported by a lemony and pomelo acidity, just stretched. The mid-palate is orchestrated by a chalky minerality that confers frankness, iodine salinity and length on the palate with fruity and chalky resonance. As an aperitif, of course, or to accompany braised pork tenderloin or cheeses such as cantal or mountain tomme. |
