Description
Salon is unique. It is the fruit of a great idea, of a desire that goes beyond the habits and achievements established in Champagne. In the 1900s, one man, Eugène-Aimé Salon, an aesthete who was madly in love with champagne, wanted this champagne from a single year, from a single vineyard, Le Mesnil-sur-Oger, in the heart of the Côte des Blancs, from a single grape variety, Chardonnay.

Tasting | The lively and frank attack, the freshness, the intense minerality will not contradict the expectation, which was confirmed by the impressive nose of mineral notes, flint, pebbles, smoked tea, with a touch of mint. A very iodized, marine nose, where seaweed is not absent. One thinks of basalt cliffs, a Giant's Causeway, created by ancient volcanoes, battered and eroded by strong waves. Time has done its work, the sun, the earth, the water, the air, worked in the vineyard, have worked this Salon 2004 carrying an assured future, sure of itself. The palate is straight, with a very nice acidity and a lot of purity. With the magnificent salinity of this great white wine still in its youth, the ripe chardonnay appears on the palate and a brioche-like effect of bread and fresh yeast emerges. The wine becomes rounder as it is oxygenated and reveals a beautiful vinosity, a roundness that balances the acidity. And the finish closes with a hint of bitterness, the signature of the greatest wines. From the extreme simplicity – seafood, farmhouse bread and salted butter – to the most elaborate turbot with oyster cream, to rediscover the flavour of hazelnuts, from the electric belons to the natural lobster, to the Japanese seaweed preparations, the iodised flavours will make an elegant companion to Salon 2004, which the noble and rich fat of a great ham, Parma or Ibérico, in a welcome contrast, will know how to exalt |
