Thimothée Stroebel’s champagnes are made from 1er Cru parcels of the Villers-Allerand terroir on the Montagne de Reims. Peasant farming and non-interventionist winemaking with very little SO2. The Héraclite cuvée reflects the majority of the estate’s grape varieties, Pinot Meunier, and shows us the beauty of this often disparaged variety.
