Thimothée Stroebel’s champagnes are made from 1er Cru parcels of the Villers-Allerand terroir on the Montagne de Reims. Peasant farming and non-interventionist winemaking with very little added SO2.Triptych: Une Terre, des Hommes, une Âme… Two harvests: 2018 and 2019, three grape varieties: Pinot noir, Pinot Meunier and Chardonnay, and three terroirs: sand, chalk and clay.

Tasting | Good intensity on the nose, clean and full of aromas of red berries, dried raspberry, reinette apple, dried flowers, dried herbs and toasted flavours. This mixture of dried fruits and red fruits is superb. The palate is quite powerful, vinous with a creamy texture that caresses the palate. It is tasty (umami) with a chalky feel, and a very fine phenolic touch. The acidity carries the wine very well and the fruit is ripe. There is a certain greediness and it is very easy to drink. The length is very good. Perfect as an aperitif. |
