Description
From a plot of land “Les Monts d’or” planted in 1989 in Chavot-Courcourt; chardonnay planted on chalk soil. Fermentation in barrels, stirring and regular topping up for 8 months. The wine is drawn off under corks and aged for a minimum of 40 months on laths. It is unglued and very lightly filtered. Photograph of a plot of land and the typicality of the chalk.

Tasting | The first nose is quite open. It delivers seductive notes of tangerine, marshmallow, mimosa, on an iodized background. After a few moments one perceives fresh butter, seaweed and white flowers which bring a lot of freshness and a maritime feeling. It is a very elegant nose. The attack in the mouth is quite broad then the wine imposes its beautiful consistency. The beautiful acidity of the wine acts as a backbone and develops citrus flavours. The effervescence quickly blends with the full-bodied character of the cuvée and produces a smooth texture. The tasting also gives off a maritime feeling that accompanies us to the finish. The finish is very salivating, mineral and fruity. It finishes with an elegantly bitter sensation reminiscent of grapefruit skin. Offer firm-fleshed, roasted or grilled fish. |
