The best pinot noir grapes from the “En Barmont” plot on a clayier, fresher, more Burgundian terroir will give birth to this wine. After a short week of maceration in whole bunches in barrels, maturing in barrels on the lees and neither filtered nor fined, this ancestral and unusual nectar brings us those fruity and liquorice notes typical of this AOC.

Tasting | Beautiful orange-pink colour, quite deep. A nose that opens with cherry stone, rose and peony, then evolves towards more mature fruits such as wild strawberry, cherry and redcurrant. It's vinous, the fruit seems evolved, at the dawn of the tertiary period, with hints of faded rose, liquorice and a little toast, gunflint and leather. A nice volume in the mouth, we find the same fruits as in the nose with a light acidity like cranberry. Present fruit, clean, marked by some evolution with those smoky and zan flavours. The whole remains in a dry, vinous register. Good length with light bitters and very fine tannins on the finish. Try it at the table with a pink duck breast, a slice of calf's liver deglazed with a dash of raspberry vinegar or on a pork shank. |
