Its ageing for several years in oak barrels, in semi-darkness cellars, refine its aromas and gives it a beautiful amber color. The Marc de Champagne title 40% vol.

II. FINE DE CHAMPAGNE (OR FINE CHAMPENOISE)

Delicate and harmonious, this brandy “Origin Regulated Appellation” (AOR) is obtained by the traditional distillation of wines exclusively from Champagne vineyards. It takes time to perfect its aromas in the secrecy of the cellars where it acquires its maturity and its pretty amber color during an aging of several years in oak barrels.

When tasted, it evokes delicate floral and vanilla flavors. Soft and round, it enhances with its subtle bouquet all the culinary preparations with which it is associated, whether they are salty or sweet.

Fine de Champagne is to Champagne, what Cognac is to Charentes and Armagnac to Gascony.

III. RATAFIA OF CHAMPAGNE

Ratafia de Champagne is obtained by mutage. It is an aperitif made with fresh grapes juice coming exclusively from the Champagne vineyards and premium brandy. The mutage prevents the start of fermentation and retains all the aromatic character of the fresh grapes. Ratafias generally grade 17-18 °.
During aging, Ratafia acquires its softness and its luminous amber color. The syrupy flavor comes from the natural sugar contained in grapes juice.

Since January 22, 2015, it has obtained the Protected Geographical Indication (PGI) and is therefore recognized by the INAO Ratafia has existed since the 13th century.

How to drink Ratafia?

Its potential production is limited to 15 millions bottles (6% of AOC Champagne), which will in any case make a rare and resolutely qualitative product.
