Rigorous selection of grapes, vinification and maturation in small 228-litre oak barrels in accordance with tradition, and voluntary limitation of volumes. The other originality lies in the choice to avoid malolactic fermentation in order to respect the nature of the grapes and the personality of the terroir. A rosé, mellow and fruity champagne.

Tasting | The first olfactory impression is very airy; floral and mineral. Then we perceive saffron, toast and fresh leather. The notes of orange peel and red fruits come at last. The attack is fresh, full, and the effervescence seems to melt immediately. The wine settles in the mouth, broad and concentrated. The dosage is low and the wine unfolds without heaviness on a background of chalky minerality. This beautiful vinosity generates a creamy texture. The finish is long, structured and full-bodied, while the texture becomes drier. This is a Champagne of good origin and good substance. More vinous than effervescent, it increases in power and quality as it warms in the flute and offers real potential as well as a gastronomic style. It will enjoy being served with the most tender dishes (the most delicate fish, beef, lamb or veal, the most noble offal). |
