Rigorous selection of grapes, vinification and maturation in small 228-litre oak barrels in accordance with tradition, voluntary limitation of volumes. The other originality lies in the choice to avoid malolactic fermentation in order to respect the nature of the grapes and the personality of the terroir. Ageing of the vintages under stapled corks. The permeability and suppleness of cork favours the micro oxygenation necessary for the ageing of wines

Tasting | The first nose expresses itself with authority on notes of bread and grilled almond, candied orange and cooked pear, with a touch of nougat when aired. Later, there are deeper notes of spices and mushrooms. The expression is complex and accomplished. The attack in the mouth is soft and lively. The wine is full and lively and gradually the effervescence becomes creamier. The frankness of the acidity and the chalky minerality highlight a silky and slightly warm texture. The whole is expressed with harmony. The finish is clean, lemony, slightly mineral and quite long. It fades away leaving the memory of a nice acid-sugar balance, a creamy sensation and a hint of fizz. A Champagne to be enjoyed by the "fireplace" or with dishes with sufficient body. |
