Description
Produced exclusively from a single parcel (Macrêts) in Barbonne-Fayel in the Sézannais region, planted between 1968 and 1987, it combines the ideal conditions for growing Chardonnay with a south-facing exposure and chalky soil enhanced by flint pebbles, bringing structure and minerality to the wine. Natural fermentation with indigenous yeasts and ageing on the lees are carried out entirely under wood. The oak used to make these barrels is selected locally by the cooper, and toasting is validated by the nose. To preserve a maximum of aromas, this cuvée is pumped only once, with gravity being used for the most part. This wine has not been chilled or filtered. Malolactic fermentation is partially carried out to preserve freshness. A complex gourmet cuvée with an explosion of aromas on the taste buds and a creamy effervescence.

Tasting | Intense et expressif, où les multiples arômes de pain grillé, de vanille, de pain grillé, de café, d'abricot sec et de fruits caramélisés se combinent avec élégance. A light, subtle woodiness that will appeal to connoisseurs. A gastronomic wine that develops on the palate with an explosion of aromas. The effervescence is creamy with a slightly acidic line. Notes of stewed fruit and mirabelle plum in brandy are fully expressed, complemented by spicy notes of cinnamon and clove. Lots of texture and presence on the palate, with a chalky, saline finish. It's the ideal partner for poularde de Bresse creamed with mushrooms, truffle risotto or, on the seaside, blue lobster with a light foie gras sauce and scallops. |
