Description
This cuvée comes from the eponymous parcel, characterized by a clay-limestone soil dominated by white limestone. This pure Chardonnay is produced as a brut nature, with no added sulfur, reflecting a natural approach that respects the terroir. It is created with as little intervention as possible. The wine undergoes alcoholic fermentation and aging on lees in barrels and demi-muids for 9 months, followed by natural malolactic fermentation. Vinification is carried out with indigenous yeasts, without fining or filtration. The transition to cold occurs naturally, taking advantage of winter frosts. It is then aged for 18 to 20 months in bottles on laths, giving it a creamy texture and aromatic complexity. This is a Blanc de Blancs champagne of chiselled elegance, limited to just a few bottles!
