Description
A blend of the two best plots on the estate, old vines over 60 years old in Avize and with the same geological profile; “Robarts” and “Gros Yeux”, vinified entirely in barrel, matured on the lees for a minimum of 6 years and bottled under a cork stopper with a staple, this cuvée reveals another facet of the Avize terroir, with a clay soil that brings great substance and richness.

Tasting | A perfect balance between mineral freshness, aromatic richness and density of substance. From the first nose, the soil expresses itself with notes of crushed stone and wet chalk. Then come the hazelnuts, first fresh and then in a more gourmand praline register. The freshness is there, carried by delicate nuances of fruit tree flowers and citrus pulp, led by lemon and grapefruit. We appreciate of course the beautiful maturity of the fruit which offers frank aromas of nectarine and juicy pears. The palate is dense and particularly enveloping at the beginning, but it is also fresh and energetic. A tonicity underlined by an extremely fine bubble and lemon flavours that excite the taste buds. The wine stretches out elegantly and above all for a very long time, turned towards the fruit coupled with a dimension that is both acidic and salivating. An aperitif Champagne to be kept for the best moments but of course a gastronomic wine to accompany refined dishes such as roasted turbot, sole meulière or simply a fresh truffle. |
