Vinified in small oak barrels and without malolactic fermentation, Cuvée 565 invites you to travel back in time. Composed of 5 consecutive vintages (2007 to 2011), it reveals a palette of noble and complex aromas. Bottled in 2012, Cuvée 565 has benefited from 6 years on laths to develop in harmony the palette of aromas of the 5 vintages that make it up and sublimate your 5 senses.

Tasting | The first nose is immediately seductive. It opens up with aromas of maturity: cooked fruit, hazelnut, acacia honey, but also praline, toasted bread and candied citrus. The nose is admirably complex and evocative of autumn, then slowly evolves into beautiful tertiary aromas. The attack on the palate is creamy, the wine presents itself like a caress. It then imposes its vinosity and density. This consistency is dressed with nice tannins and punctuated by a perfectly sharp nervousness. It also offers, thanks to the "melting" of the effervescence, a particularly dense, almost unctuous texture. This tactile sensation is not unlike umami. The finish is powerful and very persistent. It is also nervous and salty, but with great clarity. This feeling of purity transports us and forces the next sip. At the table, we look for textures that are both dense and noble. Cuvée 565 will be satisfied with a 24 month old Parmesan cheese, but will also appreciate the company of Bresse poularde with mushrooms. |
