Bollinger also makes superb red wines, like the one from the mythical Côte aux Enfants in Aÿ. Since the creation of Bollinger Rosé in 2008, the Poirier Saint-Pierre and Montboeuf parcels in Verzenay have been worked in the same way as the Côte aux Enfants to complete the production and thus offer great wines for making great champagnes. Rosé d’assemblage with the addition of only 5 to 6% of these red wines, due to their strength, which reveals a Champagne style specific to this House.

Tasting | On the nose, the nobility of small red fruits with notes of redcurrant, cherry and wild strawberry; a spicy touch, which links Bollinger Rosé to the style of Spécial Cuvée. On the palate a subtle combination of structure, length and liveliness with a tannic side reminiscent of the addition of red wine; velvety fine bubbles; wild red fruit flavours. Bollinger Rosé marks an intimate, offbeat moment; it is also perfect for a summer afternoon picnic, as an aperitif or with a fruity, low-sugar dessert. It will go well with langoustine, lobster, salmon or Japanese cuisine. |
