Tasting | The first nose is rich and concentrated, delivering subtle notes of liquorice, fresh meringue, fresh grapes, white peach, with clay accents reminiscent of some alliaceae. The aeration of the Champagne reveals notes of mimosa, verbena, pruned almond, with the remarkable freshness of a bouquet of gentian, lime blossom and daisy. The first contact on the palate is soft and fresh, with a creamy and melted effervescence. The Champagne develops a fruity substance that unfolds exponentially with energy and a fulgurating well-integrated lemony freshness. The mid-palate is gripped by clay minerals that hug the palate with delicacy and precision. The coated ensemble gains a saline finish that reveals some infused bitters, like a signature of the place. The ensemble expresses itself unvarnished and uncompromisingly, with great singularity and a concentration that augurs ever greater pleasure. It is a Champagne as rare in its typicity as it is experiential and seductive. |
