This 100% Pinot Meunier from the Marne Valley on clay (illite) soils was vinified and aged in egg-shaped vats made of clay and concrete. Tasting | The first nose is elegant: brioche, custard, hazelnut, yellow flowers (mimosa). With airing, the expression becomes more intense and tends towards cooked pear, cardamom and anise. Then, we perceive the reinette apple, the quince jelly, the white pepper, the iodine. The grape variety asserts itself with great complexity and a seductive, appetizing character. The attack in the mouth is precise and without firmness. Then we discover a structured, fleshy and lively wine, well accompanied by the tonicity of the effervescence. The balance is very coherent, dynamic and silky at the same time. The finish is fresh, very long and has an elegant, saline minerality with a slight chalky feel. The mouth ends as it began, with precision. This is a beautiful champagne of identity, an accomplished expression of the miller, with a form of aromatic complexity and gustatory balance despite the relative youth of the wine. It can be served with seed puffs as an aperitif or at the table with ceviche, crab toast, a salad of pink radish and grated Comté 18 months, red mullet fillets with lemon or breaded asparagus. |
