In addition to the four flavours: acid, bitter, salty and sweet, the Japanese have identified another flavour: umami, which could be translated as tasty (UMAI: delicious MI: taste = UMAMI: tasty). This sensation refers to the velvety, creamy aspect of certain foods. This cuvée honours this generosity in the mouth. Made from vines that are at least 60 years old, with light tillage to maintain micro-organism life, and then matured in oak barrels with batonnage (stirring of the lees), this champagne is a tasty invitation to sparkle.

Tasting | The nose is greedy, with beautiful notes of butter, apricot and blueberries. The attack in the mouth is fruity, with flavours of almonds, cooked pear and plums. The generosity of the mouth gives way at the very end to a delicate freshness, typical of the Champagne chalk of the Côte des Blancs. It is a surprisingly smooth champagne that is not synonymous with heaviness, far from it. If you like sushi and sashimi, or simply firm-fleshed fish, you know which wine to choose! |
