The nose is fruity, with notes of quince, apple, apricot and pear. Aeration reveals more pastry notes of butter, cinnamon almond and mocha. In the mouth: Lemon acidity and minerality add to the fruity volume, leading to a slender finish, both iodized and earthy. Of course to be enjoyed as an aperitif, but it will also enhance your pork-based dishes such as Reims ham or ribs. It also goes perfectly with poularde accompanied by chanterelles.
