Description
Since 2005, the reserve wines from the three grape varieties have been kept in vats and barrels. Each year, these old wines are “refreshed” by 25% of young wines. This method, known as the solera, makes it possible to combine the aromatic complexity of old wines with the finesse of young wines. Today, this perpetual reserve from 2005 to 2012, matured in small oak barrels, is then corked and aged for many years in the cellars on its fine lees.

Tasting | The nose is surprisingly fine for a solera with its notes of melted butter, toasted almond and custard. The attack on the palate is fresh, warm and vinous, with the same unctuous texture combined with very light aromas of candied fruits and spices. The finish is very long with a beautiful minerality and aromas of white mushrooms. Of course it can be enjoyed as an aperitif, but this Champagne is made for gastronomy, such as with lobster, poularde de Bresse with morels or hard cheeses. |
