Description
A great homage to the champagnes of yesteryear, this wine is made from two parcels, “Les Secs” and “Les Crayeres”; vinified and matured in 205-litre Champagne barrels and then corked in the old-fashioned way with a cork on a square ring. This cuvée will remain on laths for a minimum of 7 years in the cellar and before tasting it invites you to discover a technique that predates the metal wirehood: corking with string.

Tasting | On the nose, delicate aromas of peach, pomelo, vanilla, sweet almond and nougat follow one another. This rich diversity is confirmed on the palate where the perfect combination of power (Pinot Noir) and finesse (Chardonnay) develops aromas of chocolate, candy, dried fruit, wax, honey, peppermint on a toasted character. This champagne has an explosive finish that unfolds in stages over several minutes. The cuvée à l'ancienne, with its delicate woodiness, will go perfectly with an aumônière of kale, a filet of Saint Pierre and its pan-fried foie gras or even a lamb mouse with honey or a white chocolate mousse. |
