Thimothée Stroebel’s champagnes are made from 1er Cru parcels of the Villers-Allerand terroir on the Montagne de Reims. Peasant farming and non-interventionist winemaking with very little SO2. Cuvée Logo is a rosé de Saignée made from a single plot, “Les Paquis”, which develops incredible richness and power.
