Description
Rigorous selection of grapes, vinification and maturation in small 228-litre oak barrels in accordance with tradition, voluntary limitation of volumes. The other originality lies in the choice to avoid malolactic fermentation in order to respect the nature of the grapes and the personality of the terroir. A remarkable cuvée with a very beautiful colour, composed only of first and great vintages of Chardonnay and Pinot Noir. The expression of all the know-how of Alfred Gratien’s Cellar Master.

Tasting | The first nose, quite discreet, opens with noble aromas of sponge cake, grapefruit, orange peel and almond. Later on we perceive a more exotic character with passion fruit, pineapple, lime and seaweed. Later still, the brioche finishes off our appetite. It is a complex and original nose. The attack in the mouth is delicate and soft. The effervescence is immediately melted into the body of the wine. The latter, full-bodied and supported by the dosage, gives a feeling of comfort and offers a particularly tasty, unctuous texture, suggesting umami. The acidity increases in power as the tasting progresses and launches the finish. The finish is very long and sapid (acidity, sweetness, salinity). It fades to a chalky minerality and aromas of honey and candied fruit brioche. With its creamy texture, it will be perfect with fish and poultry with the most tender flesh and accompanied by cream or butter. |
