Pascal honours the formidable terroir of Mesnil-sur-Oger, on which he cultivates nearly 2 hectares of old Chardonnay vines. With its dominant exposure to the east, its thin, filtering soils and its pure chalk subsoil, Mesnil-sur-Oger is the archetype of the great Chardonnay terroir. Half of this Grand Cru is vinified in old barrels and aged on lees for 7 months before bottling

Tasting | From the first nose, a full, charming and sensual style with notes of flowers and ripe, even candied fruit, around apricot and peach, quince, pineapple, orange fruit paste. Fine notes of honey, pink biscuit, nougat and bread pudding add to the sweetness and delicacy. As the wine is aired, many flowers seem to bloom, bringing lightness and airy finesse to the whole (lily of the valley, acacia, carnation, violet). Bergamot, anise, mint and ginger enhance the feeling of energy and freshness. The balance is superb! On the palate, just-picked fruit, with pear, apple, yellow plum, quetsche and mandarin. The mineral expression is particularly subtle, evoking rock dust. The fruit continues to unfold its charms, now offering more exotic accents of pineapple and mango. This Grand Cru Diapason is a champagne of intimacy and emotion, which will delight you during a gastronomic dinner for two. One thinks of beautiful white asparagus and its mousseline sauce, of a viennese of sole with old parmesan, of sweetbreads with wild mushrooms. |
