Presented in a superb 18th century bottle, the Bleu Brut Cuvée des moines is the champagne that made Besserat De Bellefon’s reputation. Without malolactic fermentation, it is made with 30% of reserve wine worked in solera and it benefits from a “petite mousse” bottling, i.e. with a lower pressure (4.5 bars instead of 7 usually in champagne) which gives it its fine and delicate effervescence.
