Description
At the beginning of the 20th century, the Champagne vineyards were destroyed by phylloxera. Everything must be replanted with rootstocks from American plants, to resist the devastating insect. Two Bollinger parcels classified as Grand Cru: Chaudes Terres and Clos Saint-Jacques, in Aÿ, will not be replanted on these American grafting stocks, hence the name Vieilles Vignes Françaises. Two plots of land cultivated in the old fashioned way, in crowds, using the provignage method, worked entirely by hand and sometimes even with the help of a draught horse. Bollinger Vieilles Vignes Françaises is a symbol, the bearer of a memory that has almost disappeared: a heritage memory, extraordinary and moving. Fermentation entirely in barrels.

Tasting | The nose is complex, racy and melted. Intense aromas of quince paste, mirabelle plum and dried fruit give way to subtle notes of mocha and toast. On the palate, a very broad aromatic spectrum is expressed in a rich, precise and greedy mouth. Remarkably persistent, with a saline finish. Vieilles Vignes Françaises can be accompanied by the rarest of dishes (white caviar; Alba truffle), but is sufficient on its own to create exceptional consumption occasions; between enthusiasts, it can be enjoyed with solemnity… |
