Description
Made entirely from first press Pinot Noir from four grands crus: Verzenay, Mailly, Verzy and Bouzy. These historic chalk terroirs combine the elegance and distinctive depth of pinot noir. Mostly vinified in stainless steel, a touch of under-wood fermentation (24%) enriches the blend. It is then aged for 3 years on lees.
After disgorging, the wine is left in the cellar for a minimum of 6 months.

Tasting | A lively, velvety nose of red rose petals and bigarreau cherries mixed with pink grapefruit and pepper. On aeration, a bouquet of sweet spices is gradually revealed, along with a sensation of great freshness. On the palate, the chiselled, chalky texture of the nose is there again. Striking, salivating attack, where the salinity and delicacy of the fruit combine in an umami that calls to the plate.. The depth of the wine is gradually revealed, around notes of cherry flesh, kumquat and wedge. Beautiful length testifying to the great loyalty of this wine to its original terroirs.. This wine lends itself to a wide range of combinations. A marvellous companion as an aperitif with grilled prawns or pata negra, it is an ideal accompaniment to poultry, game birds or finely smoked fish such as sea bass or red mullet. Its lively, deep character also goes well with more gourmet, spicy dishes with sweet and sour notes, such as tajine or Indian-style pork. |
