Description
This champagne is made from grapes from the Les Grands Champs parcel located on the Massif de Saint Thierry. It is a rather steep plot. Its chalky sand, chalk and clay soil produces remarkable grapes, as do the wines of this place once worked by the Benedictine monks of the Abbey of Saint Thierry. The wines are aged in 228 litre Burgundy barrels to prolong the aromatic complexity of these superb juices. It is a champagne with a magnificent minerality, underlined by beautiful bitters.

Tasting | First of all, a sensation of balance emerges in this mineral, delicate and very aromatic nose. The nose is quite fruity (white and yellow fruits), creamy and greedy (rolled in red fruit jam), with a mineral touch. The chalky, saline and tonic tension is first present on the palate with hints of frosted lemon and lime, then we find the fruity and creamy character, making the wine rather greedy. The volume in the mouth is appreciable. The finish remains tense with a nice saline and chlorophyll touch. This wine is sufficient on its own as an aperitif or it will reveal itself at the table to accompany a sea bass with beurre blanc or scallops. |
