Champagne Clandestin is the adventure of a Burgundian, Benoît Doussot, who notes that Champagne terroirs are not delimited like in his native Burgundy. Unlike Burgundy, Champagne has no climates, and that’s where he got the idea of looking for grapes from different terroirs on the Côte des Bar. And so, in 2016, his first vintages were born. Austral will be made from old Pinot Noir vines planted facing due south, on Kimmeridgian soil typical of the Côte des Bar. Brought up at the Vouette & Sorbée school, the champagnes are made from a single vintage. They are not dosed and are vinified in oak barrels as naturally as possible. This is a champagne of gourmandise and expressiveness, full of sunshine.

Tasting | The nose is gourmand, evoking notes of ripe fruit such as apple, pear and red fruit, as well as toast and brioche. Notes of bergamot, ginger and dried flowers follow. The palate opens with a supple, round attack. The generosity discovered on the nose is repeated, with a vinous side. Notes of apple, pear and yellow plum, with a lovely saline minerality and well-melted woody notes of fresh butter and pastry. The finish is fresh and lingers on toasty, salty notes. It's a champagne that's perfect as an aperitif, and can be enjoyed at the table with a beef carpaccio, for example. |
