The 2004 wine year will go down in the history of Dom Pérignon champagne as one of ease and generosity. The year unfolds almost perfectly, smoothly and without excess, and the seasons follow each other with ease and fluidity. In creating the 2004 blend, more than in any other Dom Pérignon vintage, the strength of the wine is simply expressed in the suppleness and richness of its movements. Only the long maturation period on yeast allows this transparent solidity to reveal itself.

| Tasting | The fruit of 2004 comes through more clearly in this second fullness of wine. Pink grapefruit and blood orange finally give way to fig. The extra time on the lees reveals the minerality of the vintage in a glorious maturity, the signature of Dom Pérignon. It has notes of cocoa, mocha, roasting, brioche and honey. On the palate, the wine evolves between tension and weightlessness. The precision is extreme, tactile and chiselled. The whole persists on a seductive, liquorice line. It goes well with lobster, veal, pigeon and green tomato sorbet. The wine's balance can also be explored with roasted pineapple, candied citrus peel and aniseed. |
