Description
Passionate about wine since her youth, and working with the great champagne houses since the end of her studies, it seemed natural for Elise to return to her family’s vineyards to make a champagne in her own image. The biodynamically cultivated vines come from a parcel of land, “Chétillon de haut”, whose soil is made up of pure chalk crossed by silt-chalk collusions. Based on the 2018 harvest, after alcoholic fermentation the wine is aged for 10 months on fine lees and 40% in barrel. A wine with no added sulphur, no fining or filtration, made from 1500 bottles. Just the energy of a winemaker and what energy! Ready, set, taste!

Tasting | The first nose reveals chalky and iodine notes followed by fresh apricot and citrus aromas. On aeration, we find notes of candied white fruit and a slight fatness. The attack in the mouth is clear. The wine is well balanced with a generous mouthfeel of fine fruit, clementine, cooked pear and peach. The finish is rich, with a hint of fresh almonds and a slight bitterness that prolongs an already very long finish. A very nice champagne which is sufficient on its own as an aperitif, but which will go very well with a white fish, or a scallop risotto for the most greedy. |
