Description
Vinified in vats and Burgundy barrels by Charles Dufour with grapes from his mother Françoise Martinot’s vineyards. This blended rosé is made from a white Bistrotage blended with a red wine from a plot in Neuville Sur Seine called “De quoi te mêles-tu” and vinified by semi carbonic maceration. With no dosage and no added sulphur, the wine is aged in the cellar on its lees for over 4 years.

Tasting | A truly surprising and unique nose with notes of blond tobacco, hay, dried flowers, orange zest and chestnut honey. The whole is fresh with a great minerality. The sensations on the palate are just as surprising with this minerality and rather oxidative aromas. A very original rosé with beautiful bitters and a blood orange finish. A unique, disconcerting champagne to be enjoyed by connoisseurs in large glasses or at the table with a sauté of veal with chorizo. |
