The nose is extremely refined, with initial notes of green apple. Then minerality quickly sets in, with very iodized, stony and yeasty aromas. On aeration, notes of white fruits such as peach and pear mingle. On the palate, the minerality is immediately apparent, with a very fresh framework of fresh citrus fruits (lemon, grapefruit). The overall effect is one of incredible balance and finesse. The stony, saline minerality of the nose is perfectly echoed on the palate. The long-lasting finish is fresh, tightly packed with beautiful bitters and unmistakable cereal and even popcorn flavors! A wine that needs to be left to open up (perhaps even decanted), and that can wait over time. Currently perfect as an aperitif or with Gillardeau oysters.
